Linda, a good friend of mine Who lives in New York, is a real foodie, but follows a paleo diet for health and lifestyle reasons. She frequently experiments with recipes adapting them where necessary to be paleo friendly. One of them which she very kindly shared with me is her paleo nutella. It has a beautiful balance of flavour and a very subtle sweetness. Linda Paleo Nutella Recipe

Ingredients

260g unsalted hazelnuts
2 tablespoons coconut oil, melted and cooled 65g cocoa powder
7 dates (soaked)
170g maple syrup
240g almond milk (more if needed)
1⁄2 teaspoon vanilla extract (optional)
pinch of salt

Method

Preheat the oven to 180°C and place a rack in the centre of the oven. Spread the hazelnuts on a baking tray and roast for 8 to 10 minutes or until light golden brown in colour. Remove from the oven and let them cool. Once cool, place them in a blender and blend until you have a smooth and creamy texture similar to that of peanut butter. Add the remaining ingredients and blend until all well combined. If you want the Nutella to be slightly thinner in consistency, add a splash of almond milk and blend further. It can be stored in an airtight container in the refrigerator for up to 3 weeks but remove from the fridge and bring it back to room temperature before using.
